What is the best way to turn X-Can on and off? Should the headphones be plugged in to the amp or not? There is nothing about it in the manual. I have read somewhere that some amps can be damaged when headphones are disconnected when turning the amp on. Some other amps could fry the headphones when being turned on.

Hi, I turn mine on with the headphones UNPLUGGED.
I UNPLUG my 'phones and then turn off the amp.

No..... not with the V1 / V2 / V3 / V8....... it doesn't matter, will not damage amp or 'phones whether you hot plug or not. I, personally, prefer to turn the X-Can on and then insert the headphone jack 20 or so seconds after (with volume control turned to minimum)...... when switching off I tend to pull the headphones out and then switch off. I have been doing as Mike recommends for years, it avoids the "noises" you would hear on power up and power down.

I have my X-CANv3 switched by a remote-controlled mains socket - I switch on, allow to settle for 10-20 seconds and then plug in the 'phones. When switching off I unplug the 'phones first.

It will not damage the HPs or amps. But it's just safer to unplug and switch off or switch on and plug in. You know just like switching on our big rigs, we will switch on the pre at Zero vol first before on the power amps. Vice-versa when offing the system. Just good practice to have a sound system for years to come.
