Pan Searing your fav steak

I bought a couple of cast iron skillets...$10 or so for each and studied how best to "season" them from hints and instructions available from the Web. I found that coating them with unprocessed Rice Bran oil and "cooking" just the pan, either on the stove top or in the oven on a medium/high (400 degree) setting in/on either "cooks" the oil into the iron after a lot of times doing this, whilst wiping off the excess oil several times during the pan "cooking" session....doing this before cooking anything to eat in the pan. Very important to 'season' these iron skillets many times, first. Even after cooking something in the pan, scraping out the leftover food, washing the pan in hot water and light dish soap (find one with little additives) and then drying and heating the pan again and oiling once hot....leaving on heat for 20 or more minutes.
Then choosing the steak, which is a personal choice. Mine being a Porterhouse which has the Strip and a tenderloin on it. Get a small one for one person or big one for two. After washing and cutting to preference oil the steak and salt liberally all over and drop in medium-high heated iron skillet with choice of oil (preferable high smoke point) like the Rice Bran, cold pressed Canola, or my fav Grape Seed oil rubbed into the pan prior to heating. Oil on steaks and light coated in pan should be enough. Cook 2 minutes on side one and 1 1/2 on side 2....Use digital meat thermometer to get to 125-130 degrees for my fav rare look and taste. That's it....add steamed fresh green beans and a baked potato and that is all I crave....in a steak meal. J
P.S. Let cooked steak sit whilst beans are steaming. Lets the juices in steak settle. Then it's a go....J
