Pretty much the only baking/dessert I do... From my Mum's collection.
Boiled Fruit Cake
4oz butter 2 eggs 1 tsp carb soda 1 cup plain flour 1 cup of SR flour 1 cup water --- 1 cup sultanas 1 cup currants 1/2 cup raisins 1/2 cup dates --- (1000ml of fruit) 1 tsp spice 1 cup sugar
Line cake tin with buttered paper. Boil all fruit, butter, sugar, & water together, & add carb soda & allow to cool. Add well beaten eggs, flour (and spice). Cook for about 1 hour at 180d.
The 1 cup of sugar is crossed out both in the ingredients list, and in the method below... can replace it with more fruit if desired. Mum said something about it adding texture, but I don't remember the last time I put it in.
Depending on the occasion, I sometimes ice it as well.

My wife, Julie, has a similar recipe from an Aunt - it's a great and fast way to make a very rich, moist, fruit cake . Packed with energy; you could climb mountains on it.

I always wondered about the bicarb though. Wouldn't the boiling remove the effect you would want - that of causing the cake to rise when baked? But we follow the old recipe anyway - if it ain't broke etc.
