Well we had some roast lamb and roast potatoes left over from the other night so thought well why not pasties so diced the lamb the roast potatoes added diced mushrooms, carrots, pumpkin and added to this a heap of minted peas add some more mint source and worcestershire source salt and cracked pepper to taste. wrap in pastry coat with egg yoke and cook for 40 minutes in a moderate oven,... Next now that I am the new owner of 4 ramekins, umm yes Derek bought especially to try your chocolate pudding recipe So Monday I cooked up some nice steak pieces with mushroom and onion with seasoned with Piri Piri cooked in a rich gravy, served with mashed potato peas and carrot. But that's another story. Soooooo I had some of this left over and made these. Pastry applied to the ramekins spooned some of the meat and gravy into the them, added some reduced peas (we call them pie mans peas here) then a layer of mashed potato and topped with some grated cheese, Ok into the oven and ,... Yes Derek next to try out the chocolate puddings

Miguel, do you think there might be an opening for pastry versions, I would mould, bake and personally fit to ensure top quality Ah back to reality,... the pies for lunch

If you are steering clear of concentrated tomatoes, except for the taste, then perhaps you shouldn't ? Concentrated tomato puree or sauce has many health benefits as far as concentration, and lycopene is very good for the prostate.Tomato sauce was found to improve concentration with WW2 pilots. I had an uncle return from duty in WW2 and he introduced us to tomato sauce on warm fresh bread straight from the baker's cart . I suppose that in a place like Rockhampton, the baker's carts have finally been retired ? P.S. I see that a new Jaycar will soon open in North Rockhampton. Did you have a hand in that ? Alex

Alex, If you like the tom sauce on bread, have a look for pan con tomato (or similar), a spanish version. It's basically tomato's, olive oil and a touch of garlic on good fresh bread. Absolutely gorgeous. Chris or Gaudixman should be able to point to a definitive recipe (I think Chris has, but I can't find it at the moment)

Your guess is right though, crushed or quick blended tomatoes, crushed garlic in olive oil and mix together. Sometimes has rosemary or dill in too. My gran, and subsequently my mum, had a killer recipe for tomato sauce. Plum tomatoes (large can) Vinegar (1/2 teacup approx) Half the above can full of water Grated ginger (a piece the size of the last segment of your thumb) Sugar (2-3 tablespoons) Sieve or blend the above together. Then boil down to a thicker consistency, if too tart add more sugar. Great on BBQ, meat loaf, burgers, fry ups etc. Robert, Your first post here looks really mouth watering, reminds me of Cornish pasties, yummy!
