A VERY simple to prepare dish and VERY tasty! (cooking time 15 minutes)
Ingredients:
1lb Minced beef 1 large onion diced 1 tin of tomato soup I/2 a cup of long grain rice (not basmati, long grain is best for this dish) 2 cloves crushed garlic. 1/2 tsp salt 1 tsp ground black pepper
Method: Arm yourself with a pressure cooker. Empty the tin of tomato soup into the pressure cooker.
Now mix the rest of the ingredients in a bowl (with your clean hands) and form into small balls (slightly smaller than a golf ball)..... add these to the tomato soup..... Set the pressure cooker onto "high" and cook under pressure for 15 minutes.
That's it! as simple as that! these balls are absolutely delicious. Don't be put off by the simplicity of this recipe, it's gorgeous.
You can serve in two ways.
1: Serve with boiled potatoes and boiled white cabbage (buttered and peppered).
2: Serve on a bed of buttered / peppered spaghetti and grate some fresh parmesan over the top.
I will add a few "complex" recipes once the board gets up and running but this is a great one to start with.

You can do the cooking in an electric frypan or pot, the cooking time is extended to about an hour! You just need to simmer and stir regularly

You just need to simmer and stir regularly Robert Seeing you Queenslanders are more likely to use real ingredients, and not pussy foot around by using minced beef, how did you manage to remove all the quills from them there rodents ? How many of the buggers does it take to make a good feed after you remove all the pointy bits ? ;D Alex

So cooking time extends to a couple of hours but that's ok there is just a lot of de-sexed echidnas.

I'll make note of this post and come back to it when I get a pressure cooker. I need a new rice cooker first though I am not fooled at all Mike, simple is best. I have always liked to cook actually.

Pressure cookers are brilliant. The goodness is preserved and meat just falls apart. We do a nice stew thing with half a bottle of red wine in it. I will dig out the recipe.

Not to spoil the goodness of a pressure cooker, but does it not destroy the vitamines ?? Or is the cooking time much shorter so it evens out ??

Well the book I got with our pressure cooker says that vitamins are preserved. Tried the porcupine meatball recipe tonight-very nice but the sauce is a little bland I think. Some basil perhaps?

Yeh, sure man...... a little less rice, some more salt, ditch the soup and replace with Italian sauce.... whatever...... The lean steak mince is not the best to use BTW.... more tasty going with the standard beef mince but you have to spoon the fat off the top.

what size is your duromatic PF?
I think that bottom one in 8 liter would work for a family pot of food .... there be 3 here.

Mine is the 3042 4L - 22cm Chaz.... would do 3 people unless you eat like a horse... plus, the smaller the pressure cooker the faster it comes up to pressure in my experience.... I also have an 8 litre Fissler Vitavit ( fissler.com/en/products/pressure_cookers/lines.html ) it's 18 years old and awaiting a new seal to arrive... these really are the Rolls Royce of pressure cookers and will last you a lifetime, easily. All parts are replaceable so you'll never need another pressure cooker. Mike.
