Sorry man, I haven't been spending much time here...... been pretty busy. You seem to have been busy yourself! That V2 of yours is looking great but, at the end of the day, there should be ZERO hiss..... it should be inky black silent. I think you're doing a workaround to suit the headphones and, whilst admirable, it's pretty much like pissing into the wind. They are the wrong impedance 'phones for the amp and no amount of tweaking will ever make them the right 'phones for the amp.
I have one of the first Project Sunrise headphone amps (pre-release number 2 of 4) only 4 made and it's a decent little amp. I use it to give valves (tubes) an audio test before I ship them out, to see they are free from microphonics etc. The Sunrise was the first hybrid amp Frans and Jeremy put into production so I can only assume the ember is a lot more accomplished. The ember will certainly be a "bit" better for your headphones but even it is only suitable for headphones from 16 - 600 ohms..... your 12ohm headphones were a bad choice for a dedicated headphone amp and pretty much a bad choice full stop..... 12 ohms will always be a hissy listen on the majority of amps.
I realise you like the IEM's but if they hiss like a snake why bother with them? It's not the amps, it's the stupid 12 0hm impedance of the IEM's that is the problem! Do you even need an amp? What source do you have?

They were pretty much open to RFI / EMI BUT (when taxi signals and mobile phone interference was low) they sounded good
As good as an X-CAN V2 in a shielded enclosure with a 120ohm (industry standard) load? No way!!!!
Things have come on leaps and bounds since the Project Sunrise amp so have a word with Frans De Gruiter at the audio "heaven" place, I'm sure he will be able to sell you a filter or a fix.
