Last night's supper: We had a very large and late brunch yesterday, so just a light(?) supper was needed. One baking tray covered with well (olive) oiled foil.. be generous. One ciabatta loaf cut into chunky slices. Jar of pesto - spread pesto onto the ciabatta slices. Topping... The last of this years tomato crop, peeled, coarsely chopped and excess juice drained off. Plus: Four garlic cloves, crushed. Handful of very finely chopped red onion. Juice of half a lemon (actually a little more would have been good) Pinch of sugar. Salt and pepper to taste. Plenty fresh basil. Slip into a 220 degree C oven and bake until the bread is sizzling on the oil-covered foil and the pesto is bubbling around the edges where it's visible. Serve with your favourite grated cheese... parmesan of course but cheddar's good too. It was good. Regards, Derek
