Well I must say pies have features this last couple of weeks mainly because I like the convenience package concept,... ;D OK tonights quest was a chicken dish with tomato and vegetables 1 Kg chicken thighs diced about 1cm cubed 2 cans of whole tomato's (crushed) spicy Italian 300gm diced mushrooms 2 or 3 medium diced Lebanese eggplant 200gm diced beans 200gm peas Add spice Portuguese Chicken spice, cracked pepper and salt to taste. bring ingredients to boil, then simmer for 20 minutes, stir we want this to get a bit thich anyway, add some *gravox mix (basic gravy mix) to a small amount of water then add to the mixture and simmer for a few more minutes. At the same time prepare 4 medium potato's cut to small 2cm cubed chunks and boil for mashing, add salt to water to taste. Mash with butter and a dollop(or 2) of cream. Allow to cool! Prepare ramekins with pastry and add about 4/5ths chicken and tomato, top with mashed potato and put lid on pie coat with egg yolk (makes about 12 pies, 2 for Mike and Alex ) Bake for about 40Min @ 180 (ovens like bit like me, slow ) and and

Very nice Robert.... must give that a go..... "spicy Italian tinned tomatoes"? what are they? There just diced peeled tomatoes with herbs, olives and a hint of chilli in a can, oh I see we call them tins but yeah canned tomatoes
