This recipe is wonderful and reliable. It is not my recipe but one from the delicious Nigella Lawson. It has never let me down.
Easy Chocolate puddings.....
Get two bowls.
Bowl 1:
In a microwave oven on 'medium', melt 150g butter and 150g of broken up 70% cocoa solids chocolate - dont' get it so hot the butter bubbles - just get it's all soft and mix the butter and choc together.
Bowl 2:
Beat three eggs, then beat in 150g sugar. When mixed through evenly, mix in three level desertspoons plain flour.
Pour the melted butter and chocolate mixture in to the egg/sugar/flour mix and stir well. This is the good bit as the whole thing gets thick and silky.
Well butter 4 to 6 ramekins (depends on how big your ramekins are) and fill each to about the two-thirds mark.
Place on a tray in a 200 deg C oven until they rise (12-15 mins?), forming a fissured crust through which you can see the still-liquid chocolate sauce inside. But even if you over-cook itand they set all through they still taste great
Serve with double cream or a real vanilla dairy ice cream.
Be prepared to make another batch straight away as the guests are usually impressed.
Handy hinet: You can make these before the main course is served and keep them in the 'fridge until needed for the oven; just allow a couple of mins more for baking.

Derek I guess the proof is in the pudding so,... firstly I have to say, sorry but that is not how you melt chocolate, get a dish stainless steal one preferably a sourcepan with water in it. Heat until warm enough take off heat work butter into chocolate, thusly other then that,... so anyhow my first attempt,...

" mmmm no vanilla ice cream but wait we have Run-n-Raisin, alas I now have specific instructions. in darlek voice, "you must get more ingredients" reply "I obey" mmmm nice one Glad you had success and great photographs as well - yes I know the 'correct way ' to melt the butter and choc is with a bain marie - but Nigella (mmmm) uses the microwave! So I use the microwave. I use an induction hob - I am told that because you can get a very even, low heat that you can melt choc and butter in a pan directly on the hob without the water bath. Haven't tried it yet. Derek
