Toasted Sandwich Maker Recipes without cheese?

I've recently bought a Waring deep fill sandwich toaster and, man, what a great thing it is with removable plates.... cleaning it is a breeze and it makes some seriously good toasties, you can even make an omelette in it. It's a fantastic piece of kit and I've been using it every evening for the past 2 weeks:

The only downside is that I have been going through a kilo of cheese every week and that is NOT good! They're so damned addictive though and, come 10pm, I think to myself "what the hell, I'll fire the Waring up".....
It started with a simple "cheese" toastie, next up was a ham and cheese toastie, then a ham cheese and onion toastie, then a cheese onion and redcurrant jelly toastie, then a cheese strawberry jam and onion toastie and last night was a cheese, onion, ham, tomato, basil and bacon toastie.
I think you guys can already see a pattern to this with the main ingredient being "cheese"
The last toasted sandwich maker I had (years ago and not a patch on the Waring) was mostly used for "cheese" duty (with the occasional chili con carne' or leftover mince toasted sandwiches)..... surely there are other things you can add that don't involve "cheese" and that is what this thread is all about!
A place to share you own personal toasted sandwich favourites and maybe pick up a few new ideas / recipes from others.
What type of bread do you run in your toasted sandwich maker? Butter, beef dripping, lard, oil or margarine on the bread? It's a world that totally needs rediscovering / revisiting as there is nothing on earth quite so tasty as a good toasted sandwich.... I can fully recommend the Waring toaster for anybody wanting a good quality / easy to clean toaster.
I have mostly been running butter as my frying agent but tried some "pure" beef dripping from my local butcher last night and the taste was absolutely heavenly..... the bread I run in the Waring is a bog standard commercial white sliced from Warburtons..... it's dimensions are wider than most but still not big enough to cover the real estate of the Waring's plates..... there must be a "wider" dimension bread out there that you can use to max out the Waring's deep fill capacity?
I'll upload a few pics over the next few weeks (of the Waring and sandwiches made) and hopefully this thread will evolve into the best toasted sandwich in the world type reference point for other sandwich toaster machine owners.
